I was reading online that these dont realy need much of a dormancy and dont want anything below -5 ? Anyone have experience growing these in the lower mainland specifically.

They're fully hardy in the lower mainland. What they don't like is early and late frost while they're still in active growth. Yes they do need dormancy but can handle a shortened one.
I have a couple different clones and they are easy enough to grow.

I know its super. But short dormancy like 2 months in fridge?

I can't offer any advice for Sarracenia in the fridge. I know there is at least one member that has had great success with it but that's because they live in a very cold climate.
Is there a reason for not over wintering them outside? You live in an awesome area for it.

Longer growing season = bigger plants ? And there r so many un knowns about our winters latly and there very soggy dont want them to rot out
