The "gray matter" I think you're referring to is dried sphagnum? If you don't have the media to repot it (sand (or perlite) and dried sphagnum) then I wouldn't repot it just yet.
You can trim off the dead traps, make the cut as close to the base of the plant I would say...
If your plants are skipping dormancy this year, then you you should keep your vft damp, but I don't think they like to be sitting in water...
