How ever I did open the greenhouse up every day for at least 5 mins to air it out a bit

Since the inside of the stem is green, it probably means you don't have anything systemic. The brown parts won't turn green again. Since you've cut the tip, the plant will produce one or more side branches close to under where you made the cut.

So do you think I should cut the brown pieces just to be sure and to make it look nice/ sprout new shoots

I personally would cut the brown bits off just to not have dead tissue hanging around to prevent potential disease. Whether you cut it off or not should not affect the plant from growing new shoots because the apical dominance is already gone. Cutting the brown tips off would mostly be cosmetic.

Many sad cuts later, I have a much smaller plant, just hope he bounces back. hopefully I can find out what actually caused this although I'm pretty sure it is the cold. Thanks for the help guys!

I live in Newfoundland and it is in my back yard faceing east but it gets full sun from 7am to 2pm

Yes please do. I would almost gaurantee that it is cold damage if you've been leaving them out at night in the greenhouse.

Sorry it's kinda a bad time of day to get a pic of it but I'm growing 3 types of drosera seeds,s leucophylla seedling, s purpera and a Venus flytrap. The leucophylla are doing great which is why I have no clue what is going on with my ventrata

I also boil some water to make it really warm and humid In there but I guesse its all cooled down over night

leucs love hot day and cold night. My seedling in an unheated greenhouse are already a foot tall in a matter of weeks.
Nepenthes Ventrata can't handle it that cold, I would say 10C at night is where you would want to be bringing it in or heating the greenhouse.
