People use a variety of things but I use New Zealand long fibre sphagnum moss mixed with some perlite. Other people may have different mixes but I find this works for me. I also have a Nepenthes Sanguinea growing in peat moss and perlite , more perlite though so the peat moss doesn't smother the roots when it compacts.
I received a couple plants in a bark , lava rock mix and they grow fine as well.

It really depends on your conditions and the species/hybrids that you are growing. A basic mix of NZ long fiber sphagnum and perlite works well for most plants. I usually make my mixes a bit drier since I tray water. The mix I use right now is coir, NZ lfs, and perlite but I'd prefer to add in orchid bark and orchid charcoal, too. (I don't because it's expensive to buy online and no one around me stocks it). Lava rock works well as a mix in, too, as does cypress mulch, rock wool, and horticultural foam.
