I know tropical plants like dews need high humidity and I had them in sealed bags to raise humidity does that mean that if I remove the baggie and acclimatize it little by little to cooler or room temperature they will die without the high humidity???

Not if they are acclimated slowly. Punch holes in the bag every few days until the bags are so riddled with holes there's no reason to have them on anymore.
You can acclimate to fast but to slow will never be a problem so take your time
