I buy these in bulk on sale if I wasn't able to grow enough. Preserving these for cooking at a later date is easy.
Clean and chop the bell peppers, place them in a ziplock bag, then toss them in the freezer.
Wash the ripe tomatoes, place in a plastic bag, then freeze.
Both frozen products work well for cooking. The tomatoes are really easy to peel, just toss in boiling water for a few seconds, then the peel will just rub off.
You can use the thawed bell peppers the same as fresh in a pinch. They retain much of their crunch.
I just had to get a few green peppers, and found them on sale. That reminded me that I haven't seen this method on the 'net yet, so I thought I'd share.
